This colourful stir-fry comes together faster than takeout.

Ingredients

  • 2 cups mixed vegetables
  • 1 block firm tofu
  • 2 tablespoons soy sauce
  • 1 teaspoon grated ginger

Method

  1. Press and cube the tofu.
  2. Stir-fry veggies over high heat.
  3. Add tofu, sauce, and ginger, then toss for two minutes.

Serve over rice and finish with toasted sesame seeds.
